Curry Chicken Salad

So delicious and refreshing. This recipe reminds me of trips to Lake Powell and lunch on the houseboat.Its cool, light and healthy!!!  My Mother In Law makes this every year. Its easy and feeds a lot of people. Plus its light enough that you aren’t left with that horrible stuffed feeling  and can go out water skiing after you eat 🙂 I am posting the amounts I used to feed my family of 4 (soon to be 5!) Here is what you will need:


  • 2 cups shredded chicken
  • 3/4 cup of honey flavored yogurt (not honey vanilla. big difference)
  • 1/4 cup mayo (optional) or you can use all yogurt
  • 1/2 tsp curry powder to start. you can always add more. this is a personal thing. some people like a hint of curry and some like a ton!
  • 1/4 tsp cumin to start
  • plenty of salt and pepper
  • 1/2 cup red grapes
  • 1/4 cup slivered almonds
  • 1 celery stalk
  • 1/4 cup scallionsn(optional)

start by prepping your ingredients. Cut your grapes, celery and scallions.


Add all ingredients to a large bowl. I start with the yogurt, mix to combine with chicken, then add spices. Spice measurements are usually never exact in my kitchen. Sometimes I am happy with what I start with and other times I feel like adding more. I just taste as I go and make adjustments. Really all depends on my mood. 🙂 Then add every thing else. Mix well and chill in the refrigerator for at least 30 min. This is so much better once it sits and chills for a bit.


We like to eat ours on fresh croissants but you can serve this however you would like! It definitely has enough flavor to stand on its own.



Valentine’s Day Rice Kripsie Treats


Happy Valentines Day!!

Rice krispie treats are probably one of the easiest and quickest treats to make. I just added a few extra fun ingredients to make them cute and festive for Valenitnes Day but you can leave out the extra if you just want to make plain old Rice Kripsie Treats. You can also swap out the ingredients for ones that correlate with any holiday.

Here is what I used:

  • 3 Tbsp butter
  • 4 cups of mini marshmallows
  • 6 Cups of Rice Cereal
  • 1 cup of white chocolate chips
  • 1/2 – 3/4 cup of Valentines sprinkles
  • 13×9 baking dish (spray or cover with foil)

Start by melting the butter in a pot over low heat. Once the butter has melted, add the marshmallows. Keep your heat on low and slowly stir you marshmallows until they are all melted. Once that happens you can add your Rice Krispies. Stir until combined. Then I added any  extra ingredients you may be using. I removed my pot from the heat at this point because I wanted my white chocolate chips to stay whole and not melt. Stir all ingredients until combined and then transfer to a 13×9 baking pan. Spread out your treats evenly and let them cool before cutting them into squares! Thats it! Quick, Easy and Adorable!!

Favorite Beauty products

Although I no longer work as a make up artist (I do take the occasional makeup job from time to time) I still take my beauty routine very seriously. I love testing out new products and revamping my collection.

*In my attempts to remove harmful chemicals from my food, cleaning and  beauty products I have found some amazing organic, natural replacements. Some products on the other hand, I have yet to find great natural products that do the job. If any of you have recommendations please leave a comment and let me now what you use!!

My sister called me a few days ago asking for a recommendation for a new face wash and I was more than happy to tell her about this one. Pacifica is a brand that I have come to love over the years and their face wash did not disappoint. In fact, It ranks within the top three of my all time favorites. It leaves my face feeling… Clean. That may sound like an obvious statement but I have used plenty of face washes that left my feeling unwashed and greasy others that completely dried out my skin. This one leaves my skin feeling clean and soft. I will definitely be trying more of their skin care as well as their makeup. They now sell pacifica at target which is an extra bonus!!

Acure Organics Brightening Facial Scrub $9.99


Contains:sea kelp, dehydrated lemon peel, french green clay, madonna lily stem cells, chlorella growth factor and argan stem cells. 

Description: brightens, exfoliates, detoxifies and stimulates new cell growth. gluten free, paraben free, no fragrance added, phthalate free

I love this brand. It is also one that has now made its way to target shelves and I couldn’t be happier. (I live at Target) I use this scrub 2-3 times a week when I feel like my face needs a deep cleaning. I really can’t say enough about this stuff. I was never really a fan of scrubs because I felt like they were tearing my face off but this one isn’t so harsh. It definitely exfoliates but I don’t feel like my skin is being ripped apart. Once use rinse it off your skin feels cleansed, smooth and awake. My skin feels like it can breath! All good things.

Mario Badescu Rose Water Facial Spray $5-$7.00


contains: rose water, aloe and other herbs

Description: use to set your makeup, soothe skin and give your skin a boost through out the day. 

I have used this product for years!!! I use it all day long. I spray my face after washing it, before I put my make up on. I will use it after I apply my makeup to give my skin some extra hydration and in the middle of the day when my skin is looking drab and tired, I spray my face again! It really does everything it claims to do. This spray is so refreshing and anything that smells like roses is a winner in my book. I purchase mine at ulta.



Loreal Curve it Curl Taming Cream $4.99 (now on sale at target for $3.99)


Description: softens, tames and defines curls. helps calm frizz. sulfate free 

My sister and I were both blessed with unmanageable, curly hair. It is like a towering mountain of frizz and spiraling madness. My hair pretty much does what it wants and the the frizz level is out of control. I have been through the wringer searching for products that work for me. Ive used high end products, drug store products, products from hair stylists. Some of which worked (usually the really expensive ones) and some that did nothing of what they claimed to do. I saw this product in the clearance section and having just run out of what I had been using I decided to give it a shot. It is amazing! My hair stays bouncy and curly without frizz for hours (not 24 hours like the bottle claims but hey….im not complaining) and if I need my hair to look presentable for a bit longer, I just dampen it a bit and add another pump of the cream. boom! back in business. This stuff also smells amazing. I will be purchasing this again.


Michel Design Works peony hand and body lotion $14.95


Contains: shea butter, aloe, jojoba oil, other herbs and botanical ingredients

I came across this line at Barnes & Noble of all places. I was instantly drawn to it because, if you know me you know, I have an obsession with peonies. I am usually disappointed with peony scented products because they have that fake floral scent. Not this product. I don’t know how they did it but its like they captured the scent straight from the peony bush in my yard and somehow put it into this bottle of lotion. It smells like I went swimming in peonies. This was especially wonderful all winter when I had no flowers in my yard to smell. I would put on this lotion, close my eyes and pretend it was summer again. Okay enough of my weirdness. It is just amazing and your skin will feel like silk so just try it!!!

Shea Moisture peace rose complex sensitive skin creme body wash $8.99


Contains: shea butter, peace rose oil complex, date palm extract and camellia leaf extract

Description: Cleanses without stripping away natural oils. softens skin. helps calm irritated skin. 

My skin is super sensitive and prone to dry eczema patches. I have to be extremely careful  what I use on my skin so that it doesn’t get itchy and irritated. I love this body wash. Not only does it smell amazing ( I think we have already established  the fact that I love floral scents) but is incredibly gentle and soft. I have used other products from this brand and I love them all. They also make baby products which I have yet to try but plan on it. cilantro lime chicken tacos


These tacos absolutely need to come with a warning! Here it is: May become extremely addicted and have the desire to eat multiple times in a week. That is what happened in our home anyway and the homes of anyone else I have ever shared this recipe with. I have found that is usually the case with recipes I come up with on the spot. They usually (not always) become our favorites. This recipe came about on a summer night when I wanted something refreshing and just so happened to have these ingredients  in our house. I am happy I did because this is now a staple in our home.


for the chicken/marinade

  • 4 chicken breasts
  • zest and juice of 1 lime
  • 3 tbsp honey
  • handful of cilantro (chopped)
  • salt and pepper

for the cilantro lime sour cream

  • 1 cup sour cream
  • handful of cilantro (chopped)
  • zest and juice of 1 lime
  • salt and pepper

other ingredients:

  • 1 ripe mango
  • 1 cup of cotija cheese (if you can’t find cotija, feta also works but cotija is best!)
  • corn tortillas
  • 5 tbsp coconut oil (separated)

Start by adding your honey, lime zest and  juice to a mixing bowl big enough to fit your chicken in. Whisk those ingredients together and add your chicken. Add the cilantro, chicken, salt and pepper. toss your chicken around to coat then let this sit while you prep everything else.


next i would prepare the cream because it only tastes better the longer it sits. In a bowl mix sour cream, cilantro, lime zest, lime juice, salt and pepper. mix until combined. Taste to make sure you have enough lime flavor. If not, add more lime juice. Store in the fridge until you are ready to serve.


peel and dice your mango. I have found that the easiest way to do this is to use a small knife, cut off the top and bottom of the mango and then slice from top to bottom down the mango until you have removed all of the skin.


now you can add 2 tbsp of coconut oil to a pan and cook your chicken. normally I would say use whatever cooking oil you would like but in this case its kind of non negotiable 😉 the coconut oil adds more sweetness to the chicken which tastes amazing with the rest of the flavors in this recipe. You want to cook your chicken until it is golden brown on the outside. The honey gives it the most amazing caramel color. should take about 3-4 minutes on each side depending on how big you chicken pieces are. just cut through the fattest part of one breast to make sure they are fully cooked before removing them from the pan. once you remove them from the pan let them rest on your cutting board while you fry your tortillas.

add the remaining coconut oil to a clean pan. Heat until melted and then you can start frying  your corn tortillas. cook the tortillas on each side until golden


With a pair of tongs, fold your tortilla in half and hold it there for a few seconds. That way when you remove it from the pan, it will hold its shape.


as soon as you remove them form the oil set aside and sprinkle with salt. From here you are practically done!! You just need to Cut your chicken into strips, or shred it and put your crumbled cotija into a serving dish.


I like to set up a little assembly line so my kids  feel like they are preparing their own food.


The finished product!!  you have now successfully created the worlds most amazing taco!!! This is by far one of my families favorite meals. I hope you guys enjoy as mush as we do.



Turmeric scrambled eggs

I started really hearing about turmeric a few years ago when I was diagnosed with an auto immune disease. I read some posts about how it helped with this, that, and pretty much everything under the sun. It wasn’t until about a year ago that I really started to do some in depth research and started using it in my everyday cooking. It would take an entire post for me explain all of the magical benefits of turmeric ( maybe that will come at a later date).  Here is a link with some helpful facts. It really deserves its own separate write up. I will say that after using it once, I was hooked. Has it positively effected my health? Yes I believe it has but not only that… I Love the taste. Especially in eggs! I will never eat my scrambled eggs again without turmeric. You can use this recipe straight up or add any veggies or topping your little heart desires. Here is how I make them.


  • 4 eggs
  • 2 tablespoon of milk (or any milk sub. you can even use water)
  • 1/4 teaspoon turmeric
  • 1/2 tbsp coconut oil
  • salt and pepper to taste

I usually end up using 4 eggs because this will feed myself and my 2 year old son. This is our go to brunch meal most days of the week while big brother is at school and dad is at work.

IMG_4626crack your eggs into a bowl for mixing. Add your milk and whisk! Whisk until you feell like your arm is going to fall off! Then keep whisking!! This incorporates air into your eggs which creates fluffier eggs!

IMG_4627 Add the turmeric and mix until combined. I like adding the turmeric in while the eggs are still in the mixing bowl because I feel they are more evenly distributed that way rather than when they are already in the pan and cooking.

IMG_4628 Get out your pan and melt your coconut oil. You can use butter or another type of oil if you choose. Coconut oil, in my opinion is the best to cook with and its another one of those things that contain endless health  benefits.

IMG_4631 once the oil is melted you can add your eggs! Make sure to cook your eggs on a low heat. Cooking them at a high temperature will dry them out and they will have the texture of rubber. Cook them low and slow for nice fluffy, moist eggs. I like to add my salt and pepper during the cooking process that way it gets all folded into the mix! you can always add ore when the eggs are done so don’t add too much to begin with. Eggs continue cooking after you take them away from the heat so make sure not to over cook them in the pan. Once you no longer see a liquid consistency, take them off of the heat.

IMG_4635 Today I felt like adding some diced tomato and fresh basil. I added the tomato when the eggs were pretty much done. They do not require much cooking. I just wanted them to be heated through. once they were done, I plated them (some for me and some for the little dude) and topped with some fresh basil. You could also top with some grated cheese. Whatever you are feeling at that moment! Go for it!! The tomato and basil were delicious. My son said his scrambled eggs tasted like pizza?I guess anything that contains tomato and basil is considered pizza! I don’t know but he said yummy and thats all that matters 🙂



Homemade Shampoo




Over the past couple of years my hair has really taken a beating. It was falling out in clumps. It was dry, brittle, it wasn’t growing like it used to and had lost all of its curl. It wasn’t until about a year ago that it hit me! Why is it that I take so many precautions when it comes to what I put into my body and I have given zero thought to what I use on my body and in my hair??? Thats when I started to research natural hair growth and conditioning treatments. This recipe will hold up for about a month without being refrigerated so you can keep it in your shower.


  • 1/2 cup coconut milk
  • 1/2 cup castille soap (i use lavender because i love the smell but you can also get unscented and use any essential oil to scent)
  • 5-10 drops rosemary oil
  • 1 tbsp vitamin e oil
  • 1 tbsp castor oil (optional)

I use the castor oil for the added benefits and because my hair needs the extra oils. Castor oil is great for hair growth and to prevent hair loss. If your hair produces enough oil on its own, I would leave out the added castor oil.

Rosemary oil also stimulates hair growth and promotes healing. Great for your scalp. It also smells amazing mixed with lavender!

I mix all of my ingredients in a measuring cup and then transfer to a jar.
